Take a sneak peek inside the kitchens at some of your favorite Town Square restaurants and get to know the chefs!

We’re so appreciative of the hard work and dedication they have put toward making sure our families have wonderful meals during the quarantine.

Meet Chef Leonardo Rosillo from Rockfish.

Q. How did you get your start in cooking?

I have always loved to cook, also seeing families come together to enjoy the food I have prepared and putting a smile on their face makes my job the best thing.

Q. How long have you been at Rockfish?

I have worked with Rockfish 8 years and counting.

Q. What’s the most popular menu item you are selling right now?

Cajun bourbon Trio and Mahi from the fish market. Bread pudding is the most popular dessert.

Q. If you could eat one thing off your menu every day for a whole week, what would it be?

I would eat Santa Fe fish tacos – those are my favorite!

Q. What do you like to make for yourself in your home kitchen?

When I’m at home I love to cook my favorite Mexican food “Enchiladas”

Q. When you’re not working, what do you like to do?

I love to spend time with my family and play soccer.

Q. What’s been the most surprising thing you’ve learned during this quarantine?

Life can change in a minute. I have learned that we need to slow down our lives and take a minute to appreciate everything we have, especially the people around us.

Q. What do you love most about working in Southlake Town Square?

I love to work at Rockfish at Southlake Town Square.
The people that work at the offices and City Hall are very friendly and they love to come to our restaurant that’s been open for over 20 years. They’re amazing.
